looks beyond delish, as anything monique posts is amazing+ her cookbook is fabulous! just curious if the bottom of the puff cooks or should I blind bake first? bringing to a party the next day…thanks!

Absolutely delicious! The only thing I changed was that I made it with a potato crust instead of the puff pastry, only because I was too lazy to go to the store and get some. Thanks Monique for another fantastic recipe!

      Perfect! Glad you enjoyed!

This recipe is so stupid easy and a crowd pleaser! I personally am not big on quiches, but I made this for brunch and it was gone in seconds!!

This is the first quiche that worked for me! It is super good. I doubled the sun-dried tomatoes. It made 7 pieces for me. I will definitely be adding this into the rotation. Thank you!

This involves a bit of prep but is excellent! I made it with goat cheese and gluten free puff pastry from Sprouts.

    • replied:

      Love that! Perfect brunch 🙂

  • says:

Can you make this without the pastry? A crustless quiche?

    • replied:

      Yes!

  • says:

Can the quiche be cooked the day before, refrigerated and reheated to serve it next day?

    • replied:

Yes! I recommend reheating it in the oven – check out the full post for instructions.

Hi! Love your recipes! Can you prepare the Spinach, Sundried Tomato, Basil quiche the night before and bake it in the morning?

    • replied:

Hmm I’m not sure if it will make the puff pastry soggy! Let me know if you try it, otherwise I’d recommend baking it up and just reheating it in the morning 🙂

We made this recipe exactly as written and it tasted AWESOME! We wouldn’t change a thing. This was the perfect high protein breakfast prep for us! The puff pastry crust was amazing and a new favorite moving forward (light and flaky). Thank you for sharing! Your cookbook is appreciated too. 😀

So happy to hear that! And glad you’re loving the cookbook, too 🙂

Yum!! I added turkey bacon on top for more protein and was tired of my usual sweet overnight oats and wanted something savory, will definitely make again!!! 10/10

I have a refrigerated pie crust on hand. How would the baking time to differ if I use that instead of a puff pastry?

    • replied:

It’s probably very similar I’d say check it at 30 minutes 🙂

I used this recipe as a jumping off point for my quiche. In effort to clean out my fridge or the veggies I had on hand I made mine with 1/3 cup onion, 1/3 cup zucchini, 1/3 cup red bell pepper, 1/3 cup yellow bell pepper and then mozzarella instead of feta and cheddar. Sprinkled in some Italian seasoning as well but everything else I followed and after baking for 40 minutes this came out perfectly! Will be making it again.

    Recipe is delightful!
I did follow this as the base of my recipe – but spiced it up by adding onion, capsicum and mushrooms into the egg mixture (which meant I put 2 more eggs in instead of 6) did everything else the same! Absolutley delish!

How do I complete egg washing the pie crust (step6) if I have completed step 3 ? (no pastry visible)

    • replied:

Hi! You’ll want to brush the very top edges of the crust that isn’t covered by the quiche filling. Check out the video to see what this looks like 🙂

I was looking for a quiche recipe with phyllo since I had a box in the fridge I needed to use. This was fantastic! My family loved it. My daughter is dairy free so I made 1.5 the recipe, making a small (aluminum size disposable pie) and a 9″ quiche. I used oatmilk and goat cheese for hers. It was just as good as the original recipe. I used the cheese I had on hand-mexican blend plus smoked guyere and a bit of parmesan. I didn’t have any cottage cheese so I put 1/2 cup of milk. BIG HIT! THANK YOU! I’ll definitely be making this again. Next time I want to add the cottage cheese.

    Perfection–and endlessly adaptable!

I hate making pie crust but love quiche. Puff pastry instead? Genius.

I’m allergic to spinach so just sauteed some zucchini and a bit of red onion instead for the veggies. Goat cheese on top. It’s MARVELOUS.

I’m already brainstorming new veggie combinations for next time. Thank you for this recipe!!

    • replied:

This one’s so fun to customize! Puff pastry all day!

  • says:

Is there anyway to make this gluten free? Or crustless?

    • replied:

Sure! Feel free to make this recipe but add the mix-ins (spinach, sun-dried tomatoes, basil) from the puff pastry quiche 🙂

Everything I make from Monique is phenom. This is no exception. Very quick and easy to whip up for a breakfast brunch or lunch, it presents beautifully and tastes even better. I opted for goat cheese and added some crushed red pepper
To the egg mix, and lots and lots of pepper. Delicious! Definitely a dish to wow friends or family.

Delicious!! Sun dried tomatoes AND feta cheese-perfect match! I made two of the quiches and have been eating them all week for breakfast! Super simple to warm in the oven and to get the crip and flakiness back to the crust after refrigeration. Thank you for the recipe!

    • replied:

Absolutely! Love this one as a meal prep breakfast 🙂

This was delicious!! Best quiche I have ever made. The use of puff pastry was a total game changer. Keep up the amazing recipes!

    • replied:

      So happy you loved it!

  • says:

I hope to make this very soon but I have no experience using frozen puff pastry. Is there a particular brand you prefer? Have you not had any issues with an undercooked bottom crust which has always been my main problem with pie baking?

    • replied:

Any brand you find in the freezer section of your grocery store should work! I think Pepperidge Farm is easily accessible. I haven’t run into the undercooking issue, just be sure you don’t let the egg mixture sit too long on the crust before baking!

  • says:

Do you think I could add artichokes or would it be too much filling?

    • replied:

Absolutely! I’d maybe do half sun-dried tomatoes and half artichokes to ensure that the egg mixture covers all the veggies.
