Tried this tonight and it was a major hit!! I used chicken tenders and some fancy fresh ramen noodles. Everyone loved it, including two fussy teens.

this was such an amazing combination. It took a very long time to come together but worth it. The marinade was so good but the smashed cucumber salad was the star. I also have never made ramen noodles like this- and will save this idea for other recpes. Thank you!

love this chicken but i dont think its necessary to use i whole can of coconut milk Alot of wasted marinade next time i will use half a can

    • replied:

I typically find that I need a full can so that the marinade covers all of the chicken well, but absolutely feel free to cut the marinade in half if you’d like!

The only thing I would change is to save half the marinate to use as a sauce for the noodles. I had way more than enough to marinate the chicken. The flavors were so fresh, just wish I had some sauce on the noodles!

      Great idea!

This one is on repeat in our house right now. When I tell you that my very picky 15 year old lights up when I tell her we’re making “that yellow chicken bowl thing” I mean it. It is so flavorful and easy. I have the kids whip up the cucumber avocado salad part. Definitely a highlight over here! Everyone loves it!

Amazing!! One of our favorites, too 🙂 Glad everyone loves it!

i made this for lunch today after marinating the chicken overnight. wow! so much flavor! used 1T sriracha, loved the ramen! and didn’t make the smashed cucumber salad- just served cut up cucumbers on the side. I did however make the salad last week for a side for a cookout and it was a huge hit. people were even putting it on their burgers! very versatile to make all together or in separate parts. as always- thank you for another great recipe!

I literally did not feel like cooking at all today but wanted something nutritious & delicious. I’m sooo glad I made this! I didn’t have sambal oelek and it was still so good. Thank you!! xx

What can be substituted for sambal oelek?

    • replied:

      Feel free to use sriracha!

WHAT A WINNER! We made the chicken, noodles and salad just as the recipe calls for and WOW it was so good! It was also a huge hit with our four year old. Will definitely be adding to our dinner rotation!

Love that! One of our new favs, too 🙂

The best! Glad you enjoyed 🙂

Thank you for the recipe! I happen to love sambal oelek, but my kids can’t handle anything spicy at all. Can you recommend a substitute that will provide the flavor without the heat? Thanks!

    • replied:

Hmm I’d suggest using your favorite mild hot sauce and just halving the amount!

Hello! I’d like to make these for dinner soon, but I was wondering, what brand of ramen noodles did you use? They look really tasty.

    • replied:

Hi! I typically just get the package of ramen noodles and discard the seasoning packet 🙂

Just made this for dinner tonight and my boyfriend and I loved it! The chicken came out perfectly marinated, and I love the combo of it with a fresh cucumber avocado salad (never would have thought of smashing the cucumber but it turned out great!) and deceptively light ginger garlic ramen. Would highly recommend for end of summer dinner 🙂

So much flavor in every bite! Glad you both loved it!
